So let's think about this a bit.
What did Genesis do? Why was Spock alive, as a child, and had no memories?
My theory--
When Spock did the "remember" thing, he didn't download his katra then. He created a link with McCoy that would only be activated upon death. That would explain why Spock was still Spock and didn't go mindless right away. It also would explain why Spock quoted his death speech after he was reunited with his soul.
We just have to accept that Spock somehow was regenerated into a baby that aged quickly. But the real question I have is whether Spock would have had his memories regenerated had he NOT done the katra thing.
If the body was aging rapidly, maybe the brain would have had its memories restored as the body aged. We don't know, since Spock was the only person that got revived this way.
